Recipe FAQs

→ Can these be prepped ahead?
Absolutely! Shape them the night before, refrigerate, and let them rise before baking.
→ Why use floss to slice?
Floss slices neatly, so your rolls keep their perfect shape instead of being squashed by a knife.
→ Are these freezer-friendly?
Totally, freeze them without frosting for up to 2 months. Warm them up before adding the frosting.
→ What’s the purpose of warming milk?
Milk at 110°F activates the yeast, getting the dough to rise properly without accidentally killing the yeast.
→ Can the quantities be doubled?
Sure thing! Use two 9x13 pans and double each ingredient to make a big batch.

Ingredients

→ Rolls

01 3 cups all-purpose flour, plus 2-4 extra tablespoons
02 1 large egg, at room temperature
03 1 cup milk, warmed to about 110°F
04 1/2 tsp table salt
05 4 Tbsp white sugar
06 2 1/4 tsp active yeast (dry)
07 2 Tbsp butter, melted (save half)

→ Filling

08 6 Tbsp butter, soft and spreadable
09 1 Tbsp cinnamon powder
10 1/4 cup brown sugar

→ Cream Cheese Frosting

11 4 oz soft cream cheese
12 1 cup powdered sugar (confectioners')
13 4 Tbsp room temperature butter
14 2 tsp vanilla extract

Steps

Step 01

Stir together warm milk, yeast, sugar, salt, egg, and 1 Tbsp of the melted butter. Add flour until stretchy but firm. Work it for 3 minutes, then cover it and let it sit for an hour to rise.

Step 02

Combine soft butter, cinnamon, and brown sugar in one bowl until it's smooth.

Step 03

Stretch dough into a 17x10 rectangle, lay down the filling, and roll tightly. Slice into 8 pieces using floss for neat edges.

Step 04

Put rolls in a 9x13 pan and let them rise under a cover for 30 minutes. Brush the tops with the left-over butter. Bake at 350°F for 20–25 minutes. Let cool at least 15 minutes post-baking.

Step 05

Whip the butter, soft cream cheese, and vanilla until creamy. Gradually sprinkle in the powdered sugar and blend fully.

Step 06

Spread the frosting generously over rolls while they're slightly warm.
