Turn regular chicken and beans into a fresh, lighter spin on chili. This healthy white chicken chili keeps plenty of flavor but skips the heavy cream, making it great for weeknight meals or laid-back gatherings.

Once I tried this bright, lighter chili, it quickly became my cozy comfort staple. Pureed beans make it creamy and wholesome—such a clever trick.

Tasty Ingredients

Easy Chili Steps

Final Move:
Drop in your cooked chicken and swirl in the sour cream at the end.
Let it Simmer:
Simmer uncovered so flavors blend and it thickens up on its own.
Spice Up:
Pile in the spices bit by bit to get just the right layered flavor.
Bean Boost:
Blend some of the beans so the chili stays thick but not heavy.
Flavor Start:
Sautée onions and garlic together—cook 'em until they're soft and smell amazing.

In my home, this lighter chili is proof you can have healthy comfort food and not lose a bit of delicious flavor.

Tasty Pairings

Dunk in some crunchy bread, grab tortilla chips, or serve it with cornbread. Toss on cilantro, sprinkle cheese, or add avocado slices.

Easy Switch-Ups

Swap in extra beans and lots of veggies for a veggie version. Turkey works instead of chicken. Want more kick? Add more chilies or toss in some cayenne.

Simple Storage

Store sealed for up to three days in the fridge. Leave the sour cream out if freezing and it'll last up to three months. Reheat gently on the stove.
