Savory Chicken Chili (Printable Version)

A rich bowl of chicken, tender beans, and mild green chiles—cozy and works with your preferred cooking method.

# Ingredients:

→ Base

01 - 1 small yellow onion, diced
02 - 2 cloves of garlic, finely chopped
03 - 2 1/2 cups chicken broth (low-sodium)
04 - 1 tablespoon of olive oil

→ Seasonings

05 - Salt and black pepper to taste
06 - 1/4 teaspoon cayenne powder
07 - 1 teaspoon and a half of ground cumin
08 - Half of a lime, squeezed for juice
09 - 1/2 teaspoon paprika
10 - 1/2 teaspoon dried oregano
11 - 2 small cans (4 oz each) diced green chilies

→ Main Ingredients

12 - 2 cups cooked chicken, pulled apart
13 - 1 cup sweet corn
14 - 1 cup Greek yogurt or sour cream
15 - 2 cans (15 oz each) great northern beans

→ Optional Toppings

16 - Chopped avocado
17 - Crushed tortilla chips
18 - Shredded cheese
19 - Chopped cilantro
20 - Sliced green onions

# Steps:

01 - Pour in some oil, cook the diced onion until it's soft, then toss in the garlic for a quick stir.
02 - Stir in the broth, green chiles, lime juice, and all of the seasonings.
03 - Drain the beans. Blend some with a bit of broth if you'd like the mixture creamier.
04 - Add the beans and corn. Let everything gently cook uncovered for about 15-30 minutes.
05 - Turn off the heat, mix in the sour cream and shredded chicken. Put your favorite toppings on and dig in!
