If food really is the way to people’s hearts, this chicken totally makes the case. I’ve watched friend after friend whip this up, and gotta say, there’s something special about a rich, garlicky sauce packed with sundried tomatoes that gets everyone swooning (or at least lining up for seconds).

Not long ago, my neighbor made this for her guy. Can’t say there was a proposal, but he did go back for a third helping. Guess it’s true—sometimes the dishes that make folks forget their manners are the real winners.

Irresistible Ingredients

  • Fresh Garlic: Grab those real cloves, skip the pre-minced stuff
  • Heavy Cream: Only the thick version will do, trust me
  • Parmesan (whole): The block is what you want, so you can shred it fresh
  • Sundried Tomatoes: These add a zippy sweet punch
  • Chicken Breast: Slice thin for speedy cooking

Kickoff Step

First, take your chicken and cut it thin, kinda like thick cards. Dust it with a little seasoned flour, just enough to give each piece a gentle coating:

Golden Sizzle

Melt some butter with oil and crank up the heat. Lay the chicken in, and let it really sizzle and brown both sides without messing with it too much:

Bring the Garlic

When your chicken’s ready, go ahead and toss in the garlic. Just sauté till your house is full of that awesome garlicky smell, about a minute should do it:

Creamy Finish

Now the fun part. Add in your broth and scrape up anything sticking—it all adds flavor. Stir in the cream and toss in your parmesan next:

The first time I did this, I tried to swap in light cream. Ended up with a runny mess instead of a nice sauce. Lesson learned: some dishes need that full, creamy fix.

Spot-On Timing

Let the sauce bubble and thicken so it sticks to the back of your spoon. Pop your chicken back in for a couple minutes to heat through.

How to Serve

It’s amazing with a pile of rice, your favorite pasta, or just slice up some crusty bread to mop up the sauce.

Switch It Up

Mushrooms? Spinach? A few more chili flakes? Add whatever sounds good to you.

Leftover Love

Stash any extras in the fridge for up to three days—though honestly, it usually disappears fast at my place.

Recipe FAQs

People say the flavor of this chicken is so irresistible it might inspire a proposal!
→ Can I swap out the chicken breasts?
You can use thighs instead, but they'll need a little extra cooking time compared to cutlets.
→ Is heavy cream necessary, or can I substitute?
Stick to heavy cream for the best sauce texture. Substitutes like half-and-half won't thicken enough.
→ How long do leftovers last in the fridge?
Keep refrigerated for up to 3 days. It's not freezer-friendly since the cream sauce could turn grainy.
→ What pairs well with this meal?
Serve with rice, pasta, or even bread to soak up the incredible sauce.

Ingredients

01 3 boneless, skinless chicken breasts, cut into thin slices
02 1/2 teaspoon of fine salt
03 1/4 teaspoon of black pepper, freshly ground
04 6 tablespoons (50g) flour, all-purpose
05 2 tablespoons (30ml) olive oil, for cooking
06 2 tablespoons (28g) butter, unsalted
07 3 cloves of garlic, finely minced
08 1 cup (240ml) poultry stock
09 1 cup (240ml) whipping cream, heavy
10 1/2 cup (43g) grated parmesan cheese
11 1 teaspoon of chili flakes
12 1/4 teaspoon of dry oregano
13 1/4 teaspoon of dried thyme
14 1/3 cup of sundried tomatoes, diced
15 1 tablespoon of chopped basil leaves, fresh

Steps

Step 01

Mix salt and pepper into flour, then coat chicken in it. Shake off any extra flour before cooking.

Step 02

Warm up butter and olive oil in a big pan on medium heat. Cook chicken for about 4-5 minutes per side until it's golden and fully done. Set aside and cover to keep warm.

Step 03

Cook the garlic just until its aroma hits. Pour in the chicken stock and stir, making sure to scrape up any bits stuck to the pan.

Step 04

Turn heat lower and pour in cream with parmesan. Stir as it heats up. Toss in chili flakes, thyme, and oregano. Taste and adjust salt and pepper.

Step 05

Mix in sundried tomatoes and put the chicken back in. Let it simmer until the sauce thickens up. Sprinkle basil on top and enjoy with pasta or rice.

Notes

  1. Buy pre-cut chicken slices if you want to save prep time.
  2. Grate a fresh block of parmesan for better melting.
  3. Add some oil from the sundried tomatoes when cooking the garlic for extra flavor.
  4. Heavy cream works best—don’t switch to half-and-half.
  5. Leftovers are fine for up to 3 days in the fridge, but it doesn’t freeze well.
