Ingredients

01 1 tbsp olive oil
02 1 medium onion, chopped into small bits
03 12 oz Andouille sausage (or Kielbasa), cut into rounds
04 Salt and pepper, add as much or as little as you like
05 1 red bell pepper, chopped small
06 1 green bell pepper, diced evenly
07 3 garlic cloves, finely chopped up
08 1 cup long-grain rice (rinse it first)
09 1 1/2 cups chicken stock
10 2 tbsp Cajun spice blend

11 Finely sliced green onions
12 Fresh-cut parsley leaves
13 Hot sauce to sprinkle on before eating

Steps

Step 01

Chop garlic into tiny bits. Rinse rice in cold water until it’s no longer cloudy. Slice sausage into even pieces, and dice peppers and onion.

Step 02

In a large pan, warm olive oil over medium heat. Toss in sausage slices and cook until they're golden, about 5-7 minutes. Pull them out and set aside.

Step 03

Using the same pan, stir in the diced bell peppers and onion. Sauté for around 3 minutes, then toss in the chopped garlic and cook for another minute.

Step 04

Stir rice into the veggies, cooking for 2 minutes to toast it a bit. Pour in chicken broth and mix in Cajun spice. Let it boil, turn heat low, cover tightly, and simmer 15-20 minutes till soft.

Step 05

Toss sausage back into the pan, mixing it into the rice and veggies. Let everything warm up for 3-5 minutes. Serve with parsley and green onions sprinkled on top.
