01 - 1 tbsp olive oil
02 - 1 medium onion, chopped into small bits
03 - 12 oz Andouille sausage (or Kielbasa), cut into rounds
04 - Salt and pepper, add as much or as little as you like
05 - 1 red bell pepper, chopped small
06 - 1 green bell pepper, diced evenly
07 - 3 garlic cloves, finely chopped up
08 - 1 cup long-grain rice (rinse it first)
09 - 1 1/2 cups chicken stock
10 - 2 tbsp Cajun spice blend

→ Garnish

11 - Finely sliced green onions
12 - Fresh-cut parsley leaves
13 - Hot sauce to sprinkle on before eating

# Steps:

01 - Chop garlic into tiny bits. Rinse rice in cold water until it’s no longer cloudy. Slice sausage into even pieces, and dice peppers and onion.
02 - In a large pan, warm olive oil over medium heat. Toss in sausage slices and cook until they're golden, about 5-7 minutes. Pull them out and set aside.
03 - Using the same pan, stir in the diced bell peppers and onion. Sauté for around 3 minutes, then toss in the chopped garlic and cook for another minute.
04 - Stir rice into the veggies, cooking for 2 minutes to toast it a bit. Pour in chicken broth and mix in Cajun spice. Let it boil, turn heat low, cover tightly, and simmer 15-20 minutes till soft.
05 - Toss sausage back into the pan, mixing it into the rice and veggies. Let everything warm up for 3-5 minutes. Serve with parsley and green onions sprinkled on top.

# Notes:

01 - You can swap in any smoked sausage you prefer.
02 - Play around with Cajun seasoning to fit how spicy you like it.
03 - Perfect dish to save leftovers for another day.
