Za'atar Egg Rolls (Printable Version)

Fluffy rolls loaded with eggs, spinach, feta, and za'atar—a Mediterranean-inspired dish perfect for relaxed mornings.

# Ingredients:

→ Main Ingredients

01 - 6 eggs
02 - 3 French rolls or similar buns
03 - 1 ounce crumbled feta cheese
04 - 2 ounces fresh spinach leaves

→ Fats & Dairy

05 - 2 tablespoons of olive oil, with extra for brushing
06 - ¼ cup of thick cream
07 - Butter for greasing your dish
08 - Optional: sour cream to go on top when serving

→ Spices & Seasonings

09 - 1 teaspoon of za'atar
10 - ½ teaspoon ground cumin
11 - 2 minced garlic cloves
12 - Salt, adjust to your taste preference
13 - Black pepper, adjust to your preference

# Steps:

01 - Bring your oven up to 180°C or 350°F before doing anything else.
02 - In a skillet, warm the olive oil and let the garlic cook on low until it softens. Turn up the heat, toss in the spinach, and cook just until it wilts (about 30 seconds). Mix in the cream and season lightly with salt and pepper.
03 - Split the buns and press down the centers with your fingers to create a space big enough to hold an egg in each one.
04 - Coat an oven dish with some butter, place the buns inside, and fill each with spinach. Crack an egg into each hollow, sprinkle feta bits around the eggs, and add cumin and za'atar on top. Lightly season with salt and pepper, then brush everything with olive oil.
05 - Let it bake for 15–20 minutes, depending on how set you want the eggs. Serve hot with a side of sour cream, if you like.

# Notes:

01 - Goes great with a little extra za'atar added as garnish.
02 - Tastes best fresh and warm, right out of the oven.
