Stuffed Toast with Strawberries & Cream (Printable Version)

Fluffy brioche loaded with cream cheese and strawberries, dipped in a cinnamon-vanilla egg coating and fried until golden perfection. Made for mornings that call for something extra.

# Ingredients:

01 - 1 cup diced fresh strawberries
02 - ½ cup milk
03 - ¼ cup powdered sugar
04 - 4 oz softened cream cheese
05 - 8 thick brioche bread slices (about 1 inch each)
06 - 3 large eggs
07 - 1 tsp cinnamon powder
08 - 1 tsp vanilla essence
09 - 2 tbsp butter (to cook)
10 - Extra strawberries & maple syrup for topping

# Steps:

01 - In a bowl, blend the cream cheese, powdered sugar, and strawberries until combined.
02 - Layer the filling between two pieces of brioche to make a sandwich.
03 - In a flat dish, whisk eggs with milk, cinnamon, and vanilla until smooth.
04 - Dip each sandwich into the egg mix so both sides are coated.
05 - Heat butter in a pan over medium heat. Fry each sandwich for 3 to 4 minutes on each side until golden brown.
06 - Sprinkle a little powdered sugar on top, then add some maple syrup and extra strawberries.

# Notes:

01 - Want to prep in advance? Store the filling in the fridge overnight.
02 - Slightly stale brioche is better since it soaks up the batter without falling apart.
