Cheesecake with Strawberries (Printable Version)

Light cheesecake filling, sweet strawberry sauce, and graham cracker bits stacked in single-serve portions. It's simple to whip up and works for every occasion!

# Ingredients:

→ Cheesecake Filling

01 - 1 ½ cups whipped topping or Cool Whip
02 - 1 tsp vanilla essence
03 - ½ cup sour cream or Greek yogurt
04 - ½ cup icing sugar
05 - 8 oz softened cream cheese

→ Strawberry Layer

06 - 1 tsp cornstarch mixed with 1 tbsp water (optional, to thicken)
07 - 1 tsp fresh lemon juice
08 - ¼ cup white sugar
09 - 2 cups diced fresh strawberries

→ Crumble Base

10 - 2 tbsp brown sugar
11 - ¼ cup butter, melted
12 - 1 cup ground graham crackers

→ Extras

13 - Extra whipped topping
14 - Chopped strawberries
15 - Strawberry drizzle

# Steps:

01 - Add strawberries, sugar, and lemon juice to a pot. Over medium heat, simmer 5-7 minutes, stirring now and then, until berries soften. If you want it thicker, stir in the cornstarch mixture and simmer briefly. Cool completely before using.
02 - In a mixing bowl, combine the crushed graham crackers, butter, and sugar. Stir well and set aside.
03 - Whisk cream cheese with powdered sugar until smooth and creamy. Blend in the vanilla and yogurt. Gently fold in the whipped topping, keeping it light and airy.
04 - Spoon graham crumbs into serving glasses. Layer with cheesecake filling and then the strawberry topping. Continue layering if you'd like, finishing with whipped cream, fresh berries, and graham sprinkles on top.
05 - Pop the glasses in the fridge for at least half an hour before serving.
