Simple Chicken Piccata (Printable Version)

Zesty 30-minute chicken piccata with a tangy lemon-caper sauce. Great with your favorite pasta for a cozy Italian night.

# Ingredients:

→ Chicken

01 - 1 tsp lemon pepper, for seasoning
02 - A pinch of salt
03 - 1 lb chicken breasts, sliced thin and flattened
04 - 1/4 cup plain flour

→ Cooking Fat

05 - 2 tbsp olive oil, split
06 - 6 tbsp butter, divided

→ Sauce

07 - 1/4 cup white wine, dry
08 - 3 tbsp capers, drained and washed
09 - 2 tsp garlic, finely minced
10 - 2 tbsp fresh parsley, chopped
11 - 1 cup chicken broth
12 - 2 tbsp standard flour
13 - 2 tbsp lemon juice

# Steps:

01 - Sprinkle the chicken with some salt and lemon seasoning, then give it a light flour coat
02 - In a pan with 1 tbsp each olive oil and butter, fry 2 chicken pieces for 3-4 minutes per side till golden. Put aside to stay warm
03 - Use the remaining oil, butter, and chicken pieces for another round
04 - Cook minced garlic in 3 tbsp butter for half a minute. Mix in some flour, then stir in wine till it reduces. Add broth, capers, and lemon juice, then simmer it all for 5 minutes
05 - Add the last tbsp of butter to finish the sauce. Toss the chicken back in, let it cook 5 minutes. Sprinkle parsley on top
