Parmesan Garlic Potatoes (Printable Version)

# Ingredients:

01 - 3 teaspoons garlic, minced (about 3 cloves)
02 - 1/4 cup olive oil
03 - 1 teaspoon oregano (dried)
04 - 48 ounces red potatoes, cut into quarters
05 - 1/2 cup Parmesan cheese, grated
06 - 1 teaspoon salt
07 - 1 teaspoon ground black pepper
08 - Fresh parsley, chopped (for topping)

# Steps:

01 - Turn your oven on and heat it up to 400°F.
02 - Grab a big bowl and toss the potato quarters with olive oil, garlic, oregano, salt, and black pepper. Make sure everything is coated well.
03 - Sprinkle in half of the Parmesan and give it a quick mix again before moving it all into a casserole dish.
04 - Cover the casserole dish snugly with foil and pop it in the hot oven for 20 minutes.
05 - Take off the foil, sprinkle the rest of the Parmesan over the potatoes, and bake uncovered for another 20 minutes.
06 - Pull the dish from the oven and garnish with the chopped parsley before serving.
