Turn your oven on and heat it up to 400°F.

Grab a big bowl and toss the potato quarters with olive oil, garlic, oregano, salt, and black pepper. Make sure everything is coated well.

Sprinkle in half of the Parmesan and give it a quick mix again before moving it all into a casserole dish.

Cover the casserole dish snugly with foil and pop it in the hot oven for 20 minutes.

Take off the foil, sprinkle the rest of the Parmesan over the potatoes, and bake uncovered for another 20 minutes.

Pull the dish from the oven and garnish with the chopped parsley before serving.
