Oreo Cheesecake Bars (Printable Version)

Silky Oreo cheesecake with rich chocolate ganache—no oven needed.

# Ingredients:

→ Crust

01 - 18 Oreo cookie halves (no filling)
02 - 4 tablespoons butter, melted (60g)

→ Cheesecake Filling

03 - 300g soft cream cheese (10.5 ounces)
04 - 70g white sugar (1/3 cup)
05 - Filling from 18 Oreo cookies
06 - 150g heavy whipping cream (2/3 cup)
07 - 10 Oreos, roughly chopped
08 - 3 whole Oreos (used for layers)

→ Ganache Topping

09 - 150g chocolate (milk) bar (5 ounces)
10 - 50g heavy cream (3.5 tablespoons)
11 - 3 Oreo cookies for decoration

# Steps:

01 - Smash the Oreo halves and blend them with butter. Push the mix firmly into a pan with parchment paper and let it chill until it stiffens.
02 - Whisk the softened cream cheese until it's creamy. Add the Oreo fillings and stir until well mixed.
03 - Using another bowl, whip together heavy cream and sugar until you get soft peaks.
04 - Carefully fold the whipped cream into the cream cheese blend. Toss in the Oreo pieces and stir.
05 - Spoon half the filling onto the chilled crust. Lay 3 whole Oreos on top, then add the rest of the filling, spreading it evenly.
06 - Put the cheesecake in the fridge, covering it up, and let it rest overnight for the best result.
07 - Warm the cream and pour it over the chocolate pieces. Stir together until smooth and leave it to cool for a bit.
08 - Spread the ganache over the cheesecake, smoothing it out evenly. Cool it for 30 minutes more.
09 - Decorate with halved Oreos on top. Slice into portions and dig in.

01 - Leaving the cheesecake to chill overnight gives it the smoothest texture.
