Molten Velvet Cakes (Printable Version)

Molten red velvet cakes with chocolate filling and cream cheese whipped topping. A sweet choice for Valentine's or any special moment.

# Ingredients:

→ Cakes

01 - 1/4 cup thick cream
02 - 1/2 cup melted salted butter, plus extra for greasing
03 - 1/2 teaspoon apple cider vinegar
04 - 1/4 teaspoon salt
05 - 1 cup fine cake flour
06 - 1/4 teaspoon baking soda
07 - 1 large egg yolk
08 - 6 tablespoons buttermilk
09 - 1/2 cup white granulated sugar
10 - 1 1/2 teaspoons unsweetened cocoa powder, extra for greasing dishes
11 - 2 ounces chopped semisweet baking chocolate
12 - 2 ounces softened cream cheese
13 - 1/2 teaspoon vanilla extract
14 - 1 1/2 teaspoons red food dye

→ Cream Cheese Whipped Cream

15 - 3 tablespoons powdered sugar
16 - 3/4 cup whipping cream
17 - 1/2 teaspoon vanilla extract

→ Additional

18 - 1 tablespoon powdered sugar for sprinkling

# Steps:

01 - Heat chocolate and cream in the microwave till melted. Let cool and chill for at least 2 hours or overnight.
02 - Set your oven to 400°F. Butter four 8-ounce ramekins and coat the insides with cocoa powder.
03 - Stir together dry stuff in one bowl. Whisk liquids in another. Blend them gently till just mixed.
04 - Pour batter into ramekins. Push a chocolate ball into the middle of each. Bake for 18 minutes and make sure the tops bounce back when touched.
05 - Blend cream cheese, vanilla, and sugar until smooth, then whip in the cream till soft peaks show.
06 - Flip the cakes onto plates. Dust them with powdered sugar and top with whipped cream. Enjoy right away.
