Put your cookies into a mixer bowl and grind them into crumbs using medium speed. Blend in cream cheese until it becomes a creamy mix.

Grab about 1.5 tablespoons of dough, press it firmly in your hands, then roll into a ball. Line them up on a parchment-covered baking sheet. Chill them for 3 minutes in the fridge.

Heat up your chocolate with half the coconut oil until smooth. Use either a microwave (in short 30-second bursts) or a double boiler. If it’s too thick, add a bit more oil.

Use a fork to drop each ball into the melted chocolate, letting the extra drip off. Sprinkle right away if you’re using any, then set them gently on the lined sheet.
