Cheesy Irish Toast (Printable Version)

A rich, fluffy twist on cheese toast, combining eggs and cheddar baked to golden perfection. This Irish favorite is a quick and satisfying snack or meal.

# Ingredients:

→ Toastie Ingredients

01 - 6 slices of bread (choose from white, brown, potato, or multi-grain)
02 - 3 large eggs
03 - 2 tablespoons softened butter
04 - 7-8 ounces shredded aged Irish cheddar (or sharp cheddar)
05 - 2 teaspoons Worcestershire sauce
06 - 2 teaspoons Dijon mustard
07 - 1 tablespoon chopped fresh chives
08 - 1/2 teaspoon ground black pepper

# Steps:

01 - Start by cranking the oven up to 425°F (220°C). Place a large baking sheet nearby.
02 - Put all the bread slices on the baking sheet. Smear the butter evenly over one side of each slice, then flip them so the buttered part is touching the pan.
03 - In a bowl, whisk together the eggs with the Dijon and Worcestershire sauce until smooth. Stir in the shredded cheddar and black pepper, making sure it’s all mixed up well.
04 - Dump the cheesy mix onto the plain side of each slice (the side not buttered), and smooth it out all the way to the edges using a spoon.
05 - Pop the tray into the oven and bake for 8-12 minutes. You’re looking for crispy, golden edges on the bread, with puffy, melty cheese that’s just starting to brown.
06 - Take the toasties out of the oven, sprinkle on some chopped chives, and dig in while it’s still bubbling hot.

# Notes:

01 - Unlike a regular grilled cheese, this Irish version has a fluffy, savory egg topping baked onto the bread.
02 - Aged Irish cheddar, like Kerrygold, is the traditional choice, but sharp cheddar works just as well.
03 - Flipping the buttered side down gives the toastie a crunchy base while letting the topping bake on top.
