Ham Cheese Muffins (Printable Version)

01 - 1/4 teaspoon garlic powder
02 - 8 ounces cubed ham steak
03 - 12 eggs, large
04 - 2 thinly sliced green onions
05 - 1/4 teaspoon black pepper
06 - 1/2 teaspoon salt
07 - 1/2 cup milk (I used skim)
08 - 3/4 cup shredded cheddar cheese, split in half

# Steps:

01 - Turn on your oven to 350°F. Coat the muffin pan generously with non-stick spray (silicone pans make this even simpler). Leave it aside for now.
02 - Grab a big mixing bowl and whisk your eggs, milk, garlic powder, salt, and pepper until everything’s blended evenly.
03 - Mix in half a cup of cheddar cheese, the diced ham, and those sliced green onions.
04 - Pour the egg mix into the muffin cups. Sprinkle the rest of the cheddar cheese on top of each.
05 - Bake for about 25-30 minutes. You’ll know they're done when they pull away from the pan and the centers are firm.
06 - Keep extras in the fridge for up to four days. They also freeze well and can easily be warmed up.
