Turn on your oven to 350°F. Coat the muffin pan generously with non-stick spray (silicone pans make this even simpler). Leave it aside for now.

Grab a big mixing bowl and whisk your eggs, milk, garlic powder, salt, and pepper until everything’s blended evenly.

Mix in half a cup of cheddar cheese, the diced ham, and those sliced green onions.

Pour the egg mix into the muffin cups. Sprinkle the rest of the cheddar cheese on top of each.

Bake for about 25-30 minutes. You’ll know they're done when they pull away from the pan and the centers are firm.

Keep extras in the fridge for up to four days. They also freeze well and can easily be warmed up.
