Chocolate Nut Bars with Sea Salt (Printable Version)

A crunchy nut bar mixed with puffed rice, sweetened with brown rice syrup, dipped in dark chocolate, and sprinkled with sea salt. The perfect mix of sweet and salty flavors!

# Ingredients:

01 - 1/2 cup puffed rice
02 - 2 1/2 cups assorted unsalted nuts (try 1 cup almonds, 3/4 cup cashews, and 3/4 cup peanuts)
03 - 1/4 cup brown rice syrup
04 - 1 1/2 teaspoons vanilla extract
05 - 1/2 teaspoon sea salt
06 - 1 cup dark chocolate chips
07 - 2 teaspoons coconut oil
08 - Optional: sprinkle flaky salt on top

# Steps:

01 - Heat your oven to 325˚F / 160˚C. Spread out the nuts on a rimmed baking tray in one layer. Bake them for 5-8 minutes until they smell toasty and have a golden color.
02 - Take an 8x8-inch pan and line it with parchment paper. Keep it ready.
03 - In a large bowl, toss your nuts with the puffed rice until they're all mixed up.
04 - Microwave the brown rice syrup for about 30 seconds to make it smoother. Mix in the vanilla and salt. Pour this over the nuts and rice, and stir until everything's coated evenly.
05 - Move the sticky nut mixture to the prepared pan. Push it down into a flat, even layer. Bake for 18-20 minutes.
06 - Take the pan out of the oven. Wait ~30 minutes until it's cool, then set the whole thing onto a cutting board. Slice it in half across the middle, then cut each half into 5-6 thin bar shapes. Let them cool completely.
07 - Put the chocolate chips and coconut oil in another microwave-safe bowl. Heat it in 30-second bursts, mixing in between until it's melted all the way.
08 - Dip one side of each bar into the chocolate mixture, then lay the bars down on a parchment-lined baking tray. Drizzle some chocolate on top and scatter flaky salt if you like.
09 - Chill the bars in the fridge until the chocolate hardens. Enjoy when ready!
