Cozy Orzo Dinner (Printable Version)

A one-pan cheesy delight with soft orzo pasta and vibrant broccoli in a rich, smooth cheddar sauce. Ready fast with barely any cleanup required.

# Ingredients:

→ Main Items

01 - 1 cup grated cheddar cheese
02 - 1/2 cup thick cream
03 - 1 tablespoon of olive oil
04 - 1 small onion, finely chopped
05 - 2 garlic cloves, chopped small
06 - 1 cup orzo pasta
07 - 1 cup broccoli pieces (frozen or fresh)
08 - 2 cups chicken or vegetable stock
09 - 1/2 teaspoon garlic powder
10 - Salt and pepper as needed

→ Extra Toppings

11 - Shredded cheddar, to taste
12 - Ground black pepper, freshly cracked

# Steps:

01 - Warm up some olive oil in a big pot over medium heat. Add the chopped onion and let it cook for 3-4 minutes until it softens and gets clear.
02 - Toss in both the minced garlic and garlic powder. Stir constantly for one minute so it doesn’t scorch.
03 - Mix in the orzo pasta, letting it toast lightly for 1-2 minutes. Stir well so it soaks up the onion and oil flavors.
04 - Pour in your stock and bring it to a boil. Turn the heat low, add the broccoli, and cover the pot. Let it simmer 8-10 minutes. Stir a few times while cooking until the orzo is soft and most of the liquid is gone.
05 - When the orzo is done, take the pot off the stove. Mix in the cream and grated cheese until everything is smooth.
06 - Adjust the salt and pepper as needed. For extra flavor, sprinkle more cheddar and a pinch of black pepper on top before digging in. Serve hot.

# Notes:

01 - Add cooked chicken or shrimp during the last step for an extra protein boost.
02 - Broccoli can be swapped with spinach, peas, or even kale if you’d like a veggie mix-up.
03 - For a kick, sprinkle some red chili flakes or squeeze a little lemon juice for brightness.
04 - If you want a lighter option, try half-and-half instead of cream. It won’t be as rich but still works nicely.
