Vibrant Egg Bites (Printable Version)

Deviled eggs get a makeover with vibrant, dyed egg whites. Perfect for Easter celebrations or baby showers.

# Ingredients:

→ For Filling the Eggs

01 - 12 large eggs
02 - 4 tablespoons chopped dill pickles
03 - 2 teaspoons mustard
04 - Salt and black pepper, as needed
05 - 2 teaspoons pickle brine
06 - ½ cup mayo

→ For Egg Coloring

07 - Different food coloring shades
08 - 1 teaspoon of vinegar per cup
09 - 6 oz water in each dyeing cup

# Steps:

01 - Place eggs in a pot and cover with cool water. Heat until boiling, then remove from heat, cover the pot, and let sit for 12 minutes.
02 - Pour off the hot water, rinse the eggs with cold water, and carefully remove their shells.
03 - Mix a few drops of food coloring in each water-filled cup. Then stir in one teaspoon of vinegar per cup.
04 - Cut the eggs lengthwise, pop out the yolks into a bowl, and drop the egg white halves into the dye. Let them sit until you like the color.
05 - Mash the yolks in a bowl and blend in mayo, pickle juice, and mustard. Once smooth, mix in chopped pickles, salt, and pepper.
06 - Take the eggs out of the dye gently with a spoon. Put them on paper towels and lightly pat them dry.
07 - Spoon the yolk mixture into a zip-top plastic bag, snip a small corner off, and pipe the filling into the colored egg whites.
08 - Place the eggs on a dish, pop them into the fridge, and keep cool until ready to eat.

# Notes:

01 - Dye the whites longer for darker hues.
02 - Use fewer dye drops for soft pastel tones.
03 - Use pink or blue for baby showers or coordinate with the party's color theme.
04 - Keep them fresh by assembling up to a day in advance and refrigerate.
