Shrimp Cauliflower Stir Fry (Printable Version)

A quick and lighter fried rice dish with shrimp. Made with cauliflower instead of rice, perfect for an easy dinner.

# Ingredients:

→ Main Ingredients

01 - 4 cups of riced cauliflower or 1 medium-sized head, chopped
02 - Shrimp, 12 ounces, peeled and prep-ready
03 - Two eggs, beaten gently

→ Veggies and Flavor Boosters

04 - Two garlic cloves, finely chopped
05 - Dice one small onion
06 - Half a cup of frozen carrots and peas mix
07 - Optional: sprinkle of chopped green onions for decoration

→ Oils and Seasonings

08 - 1 tablespoon of sesame or olive oil
09 - 3 tablespoons of tamari or soy sauce
10 - Optional: 1 tablespoon extra sesame oil
11 - Add salt and pepper however you like

# Steps:

01 - Break cauliflower into chunks and pulse in a processor until rice-like, or grab pre-packaged cauliflower rice.
02 - Warm oil in a big sauté pan over medium-high. Cook shrimp 2-3 minutes per side, then set aside.
03 - In the same pan, cook garlic, onion, and the frozen veggies for around 3-4 minutes, stirring often.
04 - Stir in the cauliflower rice and let it cook for 5-7 minutes. You want it tender and just a little browned.
05 - Move rice to one side, scramble the eggs on the empty side. Toss shrimp back in, pour in soy sauce, and stir everything. Cook 2 more minutes.
