Blueberry, Honey & Feta Naan Flatbread (Printable Version)

Sweet caramelized onions pair with honey, feta, and blueberries on naan. Perfect for lunch or as a tasty starter!

01 - 1 cup fresh blueberries
02 - Micro arugula or regular baby arugula, to finish
03 - 1 cup thinly sliced red onion
04 - 2 naan flatbreads
05 - 2 tablespoons honey
06 - 1/2 cup feta cheese
07 - 1/2 cup ricotta cheese
08 - Kosher salt, as needed
09 - A pinch of red pepper flakes
10 - 1 teaspoon olive oil

# Steps:

01 - Turn the oven to 400°F. Put parchment paper onto a baking sheet, lay down the naan, and give them a quick spritz or brush with water. Leave them for now.
02 - In a medium-sized pan over medium-low heat, warm up some olive oil. Toss in the onions, sprinkle on a little salt and red pepper flakes, and stir until soft. After 3-5 minutes, drizzle with honey and cook until caramelized. Turn off the heat.
03 - Combine feta and ricotta in a small bowl, mixing until smooth.
04 - Slather your cheese blend over the naan. Spread out the caramelized onions and scatter blueberries evenly across.
05 - Pop the naan pizzas into the oven for around 10 minutes. Look for the blueberries to start softening, the cheese to warm through, and the naan to crisp up. Once done, pull them out and add arugula on top before serving.
