Oat Berry Bars (Printable Version)

Tasty bars made with oats, raspberry jam, and a crumbly layer on top. Perfect to grab while heading out or to enjoy as a mid-day treat.

# Ingredients:

01 - 1 ½ cups quick oats
02 - ½ cup melted coconut oil
03 - 1 teaspoon baking powder
04 - ⅓ cup maple syrup
05 - ⅓ cup granulated or coconut sugar
06 - 1 ½ cups all-purpose or gluten-free flour
07 - ½ cup raspberry preserves
08 - ½ teaspoon of salt

# Steps:

01 - Set your oven to 350°F and grease an 8x8 pan with cooking spray. Put it aside for now.
02 - Stir everything except the preserves in a big bowl.
03 - Take two-thirds of the mix and spread it evenly across the bottom of the greased pan. Use your hands to flatten it out.
04 - Carefully layer on the preserves, leaving a half-inch gap between the edges and the pan to stop burning.
05 - Crumble the rest of the mix on top. Press gently so it sticks once baked.
06 - Place your pan on the middle rack and bake for roughly 25-30 minutes or until the top is golden.
07 - Let the bars cool on a rack before slicing and serving.
