Gluten-Free Fritters (Printable Version)

Golden, crispy gluten-free fritters full of apple pieces, fried to perfection, and finished with a sugary glaze.

# Ingredients:

01 - 2 apples, peeled and small diced
02 - 1 1/2 cup gluten-free flour mix (210g)
03 - 1/2 teaspoon salt
04 - 3/4 teaspoon xanthan gum (skip if your flour already has it)
05 - 2 tablespoons packed light brown sugar (28g)
06 - 1 teaspoon ground cinnamon
07 - 1/4 teaspoon ground nutmeg
08 - 2 teaspoons baking powder
09 - 2/3 cup milk, any type works (160ml)
10 - 1 tablespoon oil (15ml)
11 - 2 eggs or 6 tablespoons aquafaba (90ml)
12 - 2 teaspoons vanilla
13 - Oil for frying (around 2 inches deep)

→ Icing Glaze

14 - 3 cups powdered sugar (375g)
15 - 1/2 teaspoon vanilla
16 - 3 tablespoons milk of choice (45ml)

# Steps:

01 - Combine the flour, xanthan gum, baking powder, salt, sugar, cinnamon, and nutmeg in a big bowl and whisk until blended.
02 - Pour in the vanilla, milk, eggs (or aquafaba), and oil. Stir or whisk until you’ve got a smooth, lump-free batter.
03 - Mix in the apple pieces until they’re spread evenly throughout the batter.
04 - Pour frying oil into a pot or deep skillet so it’s about 1 1/2 to 2 inches deep. Heat on medium-high until it reaches 360-375°F (80-90°C).
05 - Drop about 1 or 2 tablespoons of batter into the hot oil carefully, leaving gaps between them. Let each side cook for around 3 minutes, then flip and fry another 2-3 minutes until golden. Repeat for the rest.
06 - Take fritters out of the hot oil and place them on a wire rack to cool a bit.
07 - In a small bowl, mix icing sugar, vanilla, and milk until a glaze forms. Add more sugar to thicken or more milk to thin it out.
08 - Dip the cooled fritters in the glaze, then place them back on the rack to drip off any extra glaze.

# Notes:

01 - Swap cinnamon and nutmeg with apple pie spice for a different flavor.
02 - Choose oils like canola, peanut, or vegetable—they handle high heat well.
03 - For egg-free, use 6 tablespoons of aquafaba (the liquid from canned unsalted beans).
04 - Most gluten-free all-purpose flour blends should work fine.
