Chilled Lime Bars (Printable Version)

Tangy and creamy bars with a crust made from dates. A fresh and delightfully vegan twist on a lime classic!

# Ingredients:

→ Cookie Crust

01 - 3/4 cup of cashews
02 - 1/2 cup of almond flour
03 - 6 dates, pits removed
04 - 1 teaspoon of vanilla extract
05 - 1/4 teaspoon of ground cinnamon
06 - 1/2 teaspoon of sea salt

→ Key Lime Filling

07 - 1/4 cup of thick coconut milk
08 - 1 1/4 cup of whole cashews
09 - 1/4 cup of maple syrup, adjust if needed
10 - Juice of 1-2 limes (1/4 to 1/2 cup), taste and adjust as needed
11 - 2 tablespoons of melted coconut oil
12 - 1 tablespoon of lime zest
13 - 1 teaspoon of vanilla extract

# Steps:

01 - Leave 1 1/4 cup of cashews soaking in water overnight for the lime filling.
02 - Blend all the crust ingredients in a food processor until you get sticky dough. Push it evenly into an 8x8 baking pan lined with parchment. Let it chill in the fridge while you prepare the filling.
03 - Combine soaked cashews, lime zest, juice, maple syrup, coconut oil, coconut milk, and vanilla in a blender. Puree until it's creamy and smooth. Tweak the sweetness or tanginess to your liking.
04 - Spread the filling on top of the crust. Place the pan in the freezer, and leave it overnight until set.
05 - Cut the frozen dessert into 9 or 16 squares. Sprinkle extra lime zest on top before serving.

# Notes:

01 - You need to soak the cashews the night before.
02 - Ok to keep frozen for three months.
03 - Feel free to alter maple syrup or lime juice based on taste.
