Thai Chicken Wraps (Printable Version)

Ground chicken tossed with garlic, chili sauce, and ginger. Topped with cashews and fresh herbs, then wrapped in soft butter lettuce for a crunchy bite.

01 - 1/4 cup diced onion (yellow or white)
02 - 1 Tablespoon sesame oil
03 - 2 garlic cloves
04 - 10 oz ground chicken
05 - 1 Tablespoon ginger, freshly minced or as paste
06 - 2 Tablespoon sweet Thai chili sauce
07 - 1 lime, juiced
08 - 1/4 cup Tamari (low sodium), soy sauce, or coconut aminos
09 - 1 teaspoon maple syrup, honey, or agave
10 - 1/3 cup broken cashews (raw, roasted, or salted)
11 - 1/4 cup freshly chopped cilantro
12 - 1/4 cup scallions, sliced
13 - 1 head butter lettuce (washed and leaves separated)
14 - 1/4-1/2 cup shredded carrots
15 - Sesame seeds for garnish

# Steps:

01 - Grab a large pan and warm it up over medium-high heat with the sesame oil. Toss in the diced onions and let them soften and brown for 2-3 minutes. Stir in the garlic and ginger, mix, and cook for 2 more minutes.
02 - Break the ground chicken into the pan with a wooden spoon, stirring it so it absorbs the onion-ginger mixture. Add a little salt and pepper while mixing. Keep cooking for 3-4 minutes until the meat is fully cooked and golden.
03 - In a small bowl, whisk together the soy sauce, lime juice, chili sauce, and sweetener until smooth.
04 - Pour the sauce into the pan over the chicken. Add the chopped cashews on top, stir everything together, then lower the heat. Let it all simmer for 2 minutes.
05 - Take the pan off the stove and let it cool a little. Toss in the shredded carrots, chopped scallions, and cilantro, giving it a good stir.
06 - Take a lettuce leaf, spoon in some chicken filling, and drizzle with a bit of sauce from the pan. Sprinkle sesame seeds on top, then repeat for the remaining wraps.

# Notes:

01 - Butter lettuce is ideal, but romaine or iceberg work too.
02 - Trader Joe's sweet chili sauce is a nice option for this.
03 - If you prefer, ground turkey can be used instead of chicken.
