Stuffed Sweet Potatoes (Printable Version)

# Ingredients:

01 - 1 medium onion, diced
02 - 1 lb of lean ground beef
03 - 2 minced garlic cloves
04 - 1 cup of chunky salsa
05 - 1 packet of taco spice blend
06 - 4 medium-sized sweet potatoes, weighing about 12-14 ounces each
07 - 1/4 to 1/2 cup of water, depending on thickness preference

08 - Grated cheese blend (Mexican-style)
09 - Chopped avocado or guac
10 - Diced fresh tomatoes
11 - Sour cream for serving

# Steps:

01 - Cook the ground beef, garlic, and diced onion together in a big pan on medium-high heat. Toss out any extra grease after cooking, then stir in the taco seasoning and salsa.
02 - Lower the heat to medium-low and let it cook for five minutes, stirring now and then until it's thick and warmed through. Add up to 1/2 cup of water to get the texture just right.
03 - Poke holes in the sweet potatoes with a fork, then microwave them on high for 8-10 minutes. Flip them halfway through. If they still feel firm, microwave in 1-3 minute bursts until soft. Let them cool a little, then cut lengthwise and fluff the inside with a fork.
04 - Pile the taco meat mixture on top of the sweet potatoes. Add toppings like guac, grated cheese, fresh tomato, or sour cream to finish them off.
