Taco Cups (Printable Version)

Soft biscuit dough filled with cheesy, taco-flavored beef. A great weeknight meal idea that kids love—and so easy to whip up!

# Ingredients:

01 - 1 cup shredded cheddar cheese
02 - 12-ounce can of ready-to-bake biscuits (or two smaller 6-ounce cans)
03 - 1 pound of ground beef (lean)
04 - 1 packet of taco seasoning, about 1 ounce
05 - ¾ cup water
06 - 2 tablespoons fresh cilantro, chopped (optional)

# Steps:

01 - Turn your oven on to 400°F and lightly coat a muffin tray with cooking spray.
02 - Break up and brown the ground beef in a big pan over medium heat, cooking for roughly 8-10 minutes. Spoon out any extra grease.
03 - Mix in the taco seasoning and water. Let it cook down for around 5 minutes until most of the liquid's gone.
04 - Stir the cilantro in and then turn off the heat.
05 - Tear the biscuits apart and lay each one inside a muffin slot, pressing it up along the edges to form little cups.
06 - Spoon the seasoned beef into each dough cup. (You might end up with a bit extra.)
07 - Scatter shredded cheddar over the top of each filled biscuit.
08 - Pop the tray into the oven and bake for 10-12 minutes. The biscuits should puff and lightly brown, and the cheese will melt nicely.

01 - Great for school lunches, appetizers for sports parties, or a quick family meal.
02 - Add extras like sour cream, diced avocado, or fresh-cut tomatoes after baking for more flavor.
