Set your oven to 400°F (200°C). Put some parchment paper down on your baking tray to make cleaning up easier.

Spread the sweet potato slices on the baking tray you prepared. Use a brush to coat both sides lightly with olive oil. Add some salt and pepper. Roast them for 20-25 minutes, flipping them over halfway, until they're soft and the edges turn golden brown.

As the potatoes cook, toss the chopped pecans into a dry pan on medium heat. Stir often for 3-5 minutes, and take them off the heat when they smell toasty.

Once the potato slices have cooled a bit, spread some goat cheese on top of each one. Sprinkle toasted pecans over the cheese. Drizzle with honey and, if you'd like, add a pinch of cinnamon.

Add a sprig of thyme or rosemary for a fancy touch if you like. These can be served warm or at room temp, perfect as a snack or side dish.
