Goat Cheese & Sweet Potato Bites (Printable Version)

01 - 3 tablespoons honey (and more to drizzle on top)
02 - Salt and pepper for seasoning
03 - 4 oz goat cheese, at room temperature
04 - Fresh thyme or rosemary sprigs, optional for decoration
05 - 2 tablespoons olive oil
06 - 1/2 teaspoon cinnamon, if desired
07 - 2 medium sweet potatoes, peeled and sliced into 1/2-inch rounds
08 - 1/2 cup pecans, chopped and lightly toasted

# Steps:

01 - Set your oven to 400°F (200°C). Put some parchment paper down on your baking tray to make cleaning up easier.
02 - Spread the sweet potato slices on the baking tray you prepared. Use a brush to coat both sides lightly with olive oil. Add some salt and pepper. Roast them for 20-25 minutes, flipping them over halfway, until they're soft and the edges turn golden brown.
03 - As the potatoes cook, toss the chopped pecans into a dry pan on medium heat. Stir often for 3-5 minutes, and take them off the heat when they smell toasty.
04 - Once the potato slices have cooled a bit, spread some goat cheese on top of each one. Sprinkle toasted pecans over the cheese. Drizzle with honey and, if you'd like, add a pinch of cinnamon.
05 - Add a sprig of thyme or rosemary for a fancy touch if you like. These can be served warm or at room temp, perfect as a snack or side dish.

01 - Mix cinnamon and honey into the goat cheese beforehand for even more flavor.
02 - Want to prep ahead? Roast the potatoes and toast the nuts earlier, then just assemble when you're ready to eat.
