Berry Streusel Cookies (Printable Version)

Tender cookies bursting with juicy berries, a hint of jam, and finished with a crispy cinnamon streusel. Like having a muffin in a cookie!

# Ingredients:

01 - 1/3 cup chilled butter, diced (for streusel).
02 - 1 cup ripe blueberries, fresh.
03 - 1 1/2 cups plain flour (for cookies).
04 - 1/2 cup unsalted butter, room temp (for cookies).
05 - 1/3 cup brown sugar (for topping).
06 - 1 tsp ground cinnamon.
07 - 1/4 tsp salt (used in streusel).
08 - 1/4 cup white sugar.
09 - 1/3 cup jam, blueberry flavor.
10 - 1 tsp pure vanilla.
11 - 1/2 cup soft brown sugar (used in cookies).
12 - 1/4 tsp salt (used in cookies).
13 - 2 tsp baking powder.
14 - 1 whole egg at room temp.
15 - 1/3 cup regular flour (for the topping).

# Steps:

01 - Toss together flour, brown sugar, salt, butter cubes, and cinnamon. Blend butter in until you see crumbly bits that look like tiny peas. Pop it in the fridge for now.
02 - Whip up butter and both sugars for a couple of minutes until fluffy. Add the egg and vanilla, mixing again until smooth.
03 - Mix together flour, baking powder, and salt with a whisk. Slowly add these to the butter mix, stirring until just blended.
04 - Carefully fold in the blueberries, trying not to squish them too much.
05 - Scoop dough onto a baking tray lined with parchment. Drop a bit of jam on top of each and gently swirl it around.
06 - Grab the cold streusel and top the cookies with it, pressing a little so it stays on.
07 - Put the cookies in a 375°F oven for 12-15 minutes. They should just turn golden, and stay soft in the middle. Let them cool fully before enjoying.

02 - Don't pull streusel from the fridge until it's ready to top.
03 - Be gentle with blueberries to keep them intact.
