Berry Tiramisu Treat (Printable Version)

A twist on the classic tiramisu, using strawberries and mascarpone for a light and airy summer dessert. Perfect to make ahead for hot days.

# Ingredients:

→ Strawberry Filling

01 - 21 ounces strawberry pie filling
02 - 1/3 cup white sugar
03 - 3 cups fresh strawberries, chopped roughly

→ Creamy Mascarpone Layer

04 - 16 ounces mascarpone cheese
05 - 6 tablespoons instant pudding mix (choose between lemon, cheesecake, white chocolate, or vanilla)
06 - 3/4 cup powdered sugar, sifted
07 - 2 teaspoons vanilla extract
08 - 2 cups heavy cream

→ Layering

09 - 12 ounces ladyfinger biscuits

→ Toppings (Optional)

10 - Powdered sugar
11 - Whipped cream
12 - Fresh strawberry slices

# Steps:

01 - Mix chopped strawberries with sugar and let the juices develop for around 10 minutes. Gently press them with a fork, then stir in strawberry pie filling.
02 - Using a mixer, whip heavy cream and vanilla until it thickens up nicely. Add powdered sugar and pudding mix, and keep whipping until stiff peaks form. Gradually fold in mascarpone cheese in two parts, blending until smooth.
03 - Soak ladyfingers briefly in the strawberry mixture and arrange a layer in a greased 9-inch dish. Spread on half the strawberry mix, then half the mascarpone cream. Repeat until all layers are done.
04 - Seal it with plastic wrap and chill in the fridge for at least 6 hours or let it rest overnight.
05 - Dress it up with optional toppings, cut into portions, and enjoy.

02 - Tastes best if eaten within 48 hours
03 - Keep refrigerated for up to 3 days
