Summer Fruit Bowl (Printable Version)

A colorful blend of strawberries, avocado, and corn tossed with a tangy lime mix. Comes together fast, in under 15 minutes!

# Ingredients:

→ For the Salad

01 - 1 diced avocado
02 - 1 cup of sweet corn (roasted or raw, from 1–2 cobs)
03 - 1/4 cup finely diced red onion
04 - 1 cup of hulled strawberries, sliced into quarters
05 - 2 tablespoons of chopped basil or cilantro

→ For the Dressing

06 - 1 tablespoon freshly squeezed lime
07 - 1 tablespoon olive oil
08 - Salt and pepper as needed

# Steps:

01 - Carefully toss the corn, strawberries, herbs, avocado, and red onion in a large bowl.
02 - Use a small bowl to mix olive oil, lime juice, salt, and pepper until blended.
03 - Pour the dressing over the salad, then toss everything lightly.
04 - Eat right away or pop it in the fridge for 10–15 minutes to chill before serving.

# Notes:

01 - Grilled corn gives a subtle smoky kick.
02 - This is best fresh since avocado changes color quickly.
03 - Team it with fish, chicken, or tortilla chips for a fuller meal.
