Set your oven to 325°F and let it preheat.

Heat up the peanut butter and butter in the microwave until melted. Stir them together, then move the mixture to a big bowl. Mix the honey and salt in next.

Toss the sourdough discard, vanilla, brown sugar, and oats into the butter-honey mix. Stir everything until it looks evenly mixed.

Add the peanuts (optional) and mini chocolate chips to the mixture. Stir gently to spread them evenly.

Put the mix in the oven for 25 minutes. Let it cool down a bit before lifting it out with the parchment paper. Transfer to the fridge for at least one or two hours to chill.

If you'd like, melt some chocolate in the microwave and drizzle it over the top. Slice everything into 12 bars before serving.
