Granola Bars with Sourdough (Printable Version)

Soft, easy-to-make bars using sourdough discard, oats, honey, peanut butter, and chocolate chips. A sweet and handy snack for anytime!

# Ingredients:

01 - 1/2 cup sourdough discard (thin consistency)
02 - 1/2 tsp salt
03 - 1/4 cup light or dark brown sugar
04 - 1/2 cup peanuts, chopped (optional)
05 - 1/4 cup melted butter
06 - 3.5 cups oats (rolled)
07 - 1 cup mini chocolate chips
08 - 1 tsp vanilla extract
09 - 1/4 cup smooth peanut butter
10 - 1/2 cup honey

# Steps:

01 - Set your oven to 325°F and let it preheat.
02 - Heat up the peanut butter and butter in the microwave until melted. Stir them together, then move the mixture to a big bowl. Mix the honey and salt in next.
03 - Toss the sourdough discard, vanilla, brown sugar, and oats into the butter-honey mix. Stir everything until it looks evenly mixed.
04 - Add the peanuts (optional) and mini chocolate chips to the mixture. Stir gently to spread them evenly.
05 - Put the mix in the oven for 25 minutes. Let it cool down a bit before lifting it out with the parchment paper. Transfer to the fridge for at least one or two hours to chill.
06 - If you'd like, melt some chocolate in the microwave and drizzle it over the top. Slice everything into 12 bars before serving.

# Notes:

01 - Cool completely in the fridge for cleaner slicing.
02 - Less honey makes crumbly bars, so adjust based on what you prefer.
03 - Swap in other favorite add-ins like seeds, other nuts, or dark chocolate.
04 - Feel free to melt the peanut butter and butter on the stove instead.
