Cinnamon Cookie Bites (Printable Version)

Soft cookies with a buttery base and a zesty tang, dusted in sugary cinnamon for a cozy, classic bite.

# Ingredients:

01 - 358g (2 3/4 cups) plain flour.
02 - 2 tsp tartar powder.
03 - 1/2 tsp table salt.
04 - A teaspoon of baking soda.
05 - 168g (3/4 cup) unsalted butter that’s softened.
06 - 310g (1 1/2 cups) sugar, plus extra 3 tbsp for coating.
07 - Two large eggs.
08 - 1 1/2 tsp pure vanilla.
09 - A tablespoon of ground cinnamon.

# Steps:

01 - Preheat the oven to 400°F and prep a baking sheet with parchment paper or a silicone mat.
02 - Stir together the flour, baking soda, salt, and tartar powder.
03 - Whisk sugar and butter until it’s fluffy and super creamy, about 2-3 minutes.
04 - Blend in eggs one at a time, then stir in the vanilla.
05 - Slowly mix the dry stuff into the wet mixture until everything’s well blended.
06 - Make small balls (about a tablespoon each) and coat them in the cinnamon-sugar mix.
07 - Pop them in the oven for 6-8 minutes, then let them sit for a couple minutes before transferring to a rack to cool.
