Preheat the oven to 400°F and prep a baking sheet with parchment paper or a silicone mat.

Stir together the flour, baking soda, salt, and tartar powder.

Whisk sugar and butter until it’s fluffy and super creamy, about 2-3 minutes.

Blend in eggs one at a time, then stir in the vanilla.

Slowly mix the dry stuff into the wet mixture until everything’s well blended.

Make small balls (about a tablespoon each) and coat them in the cinnamon-sugar mix.

Pop them in the oven for 6-8 minutes, then let them sit for a couple minutes before transferring to a rack to cool.
