Flavored Salmon Bites (Printable Version)

Delicious salmon bites loaded with spices and herbs, paired with a smooth and creamy avocado-cilantro sauce. A healthy dish that comes together in no time.

# Ingredients:

→ Salmon Ball Ingredients

01 - 1/2 cup breadcrumbs (or almond flour for a gluten-free alternative)
02 - 1 teaspoon smoked paprika
03 - 1 large egg
04 - 2 cloves minced garlic
05 - 1 teaspoon grated lemon peel
06 - Salt and black pepper as you like
07 - 2 tablespoons olive oil for frying
08 - 1/4 cup finely chopped parsley
09 - 1/4 cup finely chopped cilantro
10 - 1 lb (450g) salmon fillet, skin removed

→ Avocado Sauce Ingredients

11 - 2 tablespoons lime juice
12 - 1 whole ripe avocado
13 - Salt and pepper to taste
14 - 1/4 cup Greek yogurt (or swap for sour cream if you'd like it richer)
15 - 1/4 cup chopped fresh cilantro
16 - 1 clove garlic, minced

# Steps:

01 - Chop the salmon into small pieces or use a food processor to roughly mince it. Toss the minced salmon into a big bowl, then add parsley, cilantro, breadcrumbs, egg, garlic, paprika, lemon zest, salt, and pepper. Stir until you've got a uniform mix.
02 - Scoop out bits of the mixture, shaping them gently into balls about 2 inches wide. Depending on size, you should end up with 12-14 pieces.
03 - Warm some olive oil in a large skillet set to medium heat. Place the salmon balls in the pan and cook for roughly 3-4 minutes per side. They should turn golden and cook all the way through. Take them out and put aside once done.
04 - Blend avocado, cilantro, Greek yogurt, lime juice, garlic, salt, and pepper in a food processor. Keep blending until it's smooth and velvety. Adjust the flavor if needed.
05 - Arrange the cooked salmon balls and drizzle the avocado sauce over them or serve it as a dip on the side. They're best eaten fresh but can stay in the fridge for leftovers.

# Notes:

01 - To get the freshest taste, use wild-caught salmon fillets.
02 - If you'd like a spicier sauce, throw some jalapeño into the mix. For a tinge of sweetness, add a few drops of honey.
03 - You can cook the salmon balls on a barbecue grill too. Just apply some oil and grill on medium heat for a charred flavor.
04 - Switch out breadcrumbs for almond flour if you're going gluten-free.
