Slice croissants open through the middle. Lay the flat sides facing up on a baking tray. Put them under the broiler for 2-3 minutes till they're lightly crispy and golden. Let them cool a bit.

Pour oil into a large non-stick pan and turn up the heat to high. Crack in the eggs and quickly break the yolks so they cook evenly.

Turn the heat down low, sprinkle some pepper on the eggs, and cook till firm. Flip 'em halfway, making sure there's no runny stuff left.

Take each croissant bottom, layer on 1 slice of ham (or bacon), add a cooked egg on top, then finish with cheese.

Cap it off with the croissant top. Microwave every sandwich for 15 seconds till the cheese is gooey. Serve right away while still warm with that fresh crunch.
