Fast Croissant Sandwich (Printable Version)

Flaky croissants layered with cheese, eggs, and ham or bacon for a speedy breakfast that tastes like it came from your favorite drive-thru. Done in minutes!

# Ingredients:

01 - 8 large eggs
02 - 8 slices of ham or crispy bacon strips
03 - Fresh ground black pepper, just a pinch
04 - 8 buttery croissants
05 - 3 tbsp oil to fry things up
06 - 8 slices of melty American cheese

# Steps:

01 - Slice croissants open through the middle. Lay the flat sides facing up on a baking tray. Put them under the broiler for 2-3 minutes till they're lightly crispy and golden. Let them cool a bit.
02 - Pour oil into a large non-stick pan and turn up the heat to high. Crack in the eggs and quickly break the yolks so they cook evenly.
03 - Turn the heat down low, sprinkle some pepper on the eggs, and cook till firm. Flip 'em halfway, making sure there's no runny stuff left.
04 - Take each croissant bottom, layer on 1 slice of ham (or bacon), add a cooked egg on top, then finish with cheese.
05 - Cap it off with the croissant top. Microwave every sandwich for 15 seconds till the cheese is gooey. Serve right away while still warm with that fresh crunch.

# Notes:

01 - Want something extra? Spread a sweet mustard glaze on the croissants before toasting (blend 4 tbsp melted butter, 2 tbsp brown sugar, and 2 tsp mustard).
02 - You can prep these ahead—let them cool first, wrap them up, and stick them in the fridge or freezer.
03 - For reheating, give them 30 seconds in the microwave till they're hot again.
04 - If frozen, no need to thaw—just heat directly. They can last up to 3 months in the freezer.
