Coconut Bites (Printable Version)

Portuguese goodies made with eggs, sugar, and flaky coconut. Crisp outside, soft inside. A quick, tasty treat for tea time.

# Ingredients:

01 - 3/4 cup white sugar
02 - 2 cups sweetened coconut flakes
03 - 1/4 teaspoon salt
04 - 2 large eggs
05 - Optional: powdered sugar to sprinkle on top
06 - 1/2 teaspoon vanilla flavoring

# Steps:

01 - Turn your oven to 350°F (175°C) and get a baking sheet lined with some parchment paper.
02 - In a big bowl, stir together the coconut, sugar, eggs, vanilla, and salt. Mix until it sticks together like a thick batter.
03 - Scoop or press the batter into little domes or mounds using your hands or a spoon, then space them out on the lined baking sheet.
04 - Pop into the oven for 15-18 minutes until the edges turn golden and the tops look slightly toasted.
05 - Let them sit on the baking sheet for a couple minutes, then move them to a wire rack to cool down all the way.
06 - If you like, sprinkle powdered sugar on top before enjoying.

01 - Finely grated coconut works best for these treats.
02 - Store in an airtight box and they’ll last about 4 days.
