Turn your oven to 350°F (175°C) and get a baking sheet lined with some parchment paper.

In a big bowl, stir together the coconut, sugar, eggs, vanilla, and salt. Mix until it sticks together like a thick batter.

Scoop or press the batter into little domes or mounds using your hands or a spoon, then space them out on the lined baking sheet.

Pop into the oven for 15-18 minutes until the edges turn golden and the tops look slightly toasted.

Let them sit on the baking sheet for a couple minutes, then move them to a wire rack to cool down all the way.
