Tortilla Pizza Rollups (Printable Version)

A fun mix of enchilada and pizza flavors. Tortillas stuffed with cheesy, beefy goodness, topped with sauce.

# Ingredients:

01 - 8 large flour tortillas
02 - 1 cup shredded mozzarella cheese
03 - 1 pound ground beef, lean
04 - ⅓ cup crumbled bacon
05 - 3 oz chopped pepperoni
06 - 1 cup ricotta cheese
07 - ⅓ cup pizza sauce
08 - 1 tablespoon Italian seasoning
09 - 1 tablespoon chopped garlic
10 - 1 cup diced yellow onion
11 - 1 medium diced green bell pepper

→ Topping ingredients

12 - 2½ cups shredded mozzarella cheese
13 - 2 cups pizza sauce
14 - ¼ cup crumbled bacon
15 - 3 oz pepperoni slices

# Steps:

01 - Warm up the oven to 375°F. On medium-high heat, cook the beef in a skillet, breaking it apart as it browns, until fully cooked through.
02 - Toss in the diced onions, bell peppers, and chopped-up pepperoni with the beef. Keep stirring and let it cook for 5-7 minutes, or until the veggies are soft.
03 - Stir in the garlic and let it cook for 2 minutes to release its aroma. Take the skillet off the heat afterward.
04 - Mix in the pizza sauce, Italian seasoning, ricotta, mozzarella, and crumbled bacon into the mixture. Stir everything together until the cheeses melt into the filling.
05 - Grab the tortillas and spoon the filling down the middle of each. Roll them tightly and lay them seam-down on a greased baking sheet.
06 - Spread pizza sauce all over the rolled tortillas. Scatter shredded mozzarella on top, then finish by layering the pepperoni slices and bacon bits.
07 - Pop the sheet in the oven for 20-25 minutes, or until the cheese bubbles and browns a little. Let them sit for 5 minutes before serving.
