Strawberry Crunch Cake (Printable Version)

# Ingredients:

01 - Crush 20 Golden Oreos into crumbs
02 - 3 tablespoons butter, melted
03 - 2 tablespoons strawberry gelatin powder

→ Creamy Cheesecake Base

04 - 3 blocks (24 oz total) room-temperature cream cheese
05 - ¾ cup white sugar
06 - 2 eggs, large
07 - 1 teaspoon vanilla
08 - ½ cup sour cream
09 - 1 tablespoon strawberry flavoring (to amp up the taste)
10 - ½ cup fresh strawberry puree (optional for extra taste and color)

11 - 1 cup powdered sugar
12 - 2 tablespoons milk
13 - 1 teaspoon strawberry flavoring
14 - A drop of pink food coloring (if desired)

→ Fluffy Whipped Cream

15 - 1 cup heavy cream
16 - ¼ cup powdered sugar
17 - 1 teaspoon vanilla

→ Crunchy Topping

18 - ½ cup Golden Oreo crumbs
19 - 1 tablespoon melted butter
20 - 1 tablespoon strawberry gelatin powder

# Steps:

01 - Heat the oven to 325°F (163°C). Combine Oreo crumbs, butter, and gelatin powder until crumbly, then press into a 9-inch springform pan. Bake for 10 minutes, then set aside to cool.
02 - Mix softened cream cheese with sugar until creamy. Beat in one egg at a time. Add vanilla, sour cream, and strawberry flavor. Stir in strawberry puree last, if using.
03 - Pour the mixture on top of the cooled crust. Wrap the bottom of the pan in foil and place it in a water-filled baking pan. Bake 50-55 minutes until the center is mostly firm but slightly wobbles.
04 - Let the cake come to room temperature. Chill in the fridge for a minimum of 4 hours or overnight.
05 - Whisk together powdered sugar, milk, strawberry flavoring, and a drop of pink coloring (if you want). Spread or drizzle on the cooled cheesecake.
06 - Combine crushed Golden Oreos, butter, and gelatin powder until blended. Sprinkle this topping over the glaze.
07 - Whip heavy cream, powdered sugar, and vanilla until you get stiff peaks. Pipe pretty swirls around the edge of your cheesecake.
08 - Cut into pieces and serve chilled. Be sure to store leftovers in the fridge!
