Bacon Pineapple Burger (Printable Version)

Bacon-wrapped beef patties baked with pineapple slices and smoky BBQ flavors—no need to fire up the grill.

# Ingredients:

→ Burger Patties

01 - 1 pound of ground beef with 93% lean and 7% fat content
02 - Half a teaspoon of salt
03 - Four tablespoons of smoky BBQ sauce, divided (use Sweet Baby Ray's or something similar)
04 - A quarter teaspoon of freshly cracked black pepper

→ Toppings & Wrapping

05 - Four soft brioche burger buns
06 - Four thick slices of fresh pineapple, core removed, each about ½ inch thick
07 - Eight slices of uncooked bacon, smoked
08 - Toothpicks to hold things together

# Steps:

01 - Set your oven to 400°F. Take a large baking tray, cover it with foil, and put an oven-safe rack on top so air can circulate while cooking.
02 - In a mixing bowl, lightly combine the beef with two tablespoons of BBQ sauce and add the salt and pepper. Handle gently so the mixture stays tender.
03 - Split the beef mix into four equal parts, about 4 ounces each. Form each one into a patty that's roughly 3½ inches wide and half an inch thick.
04 - Arrange two slices of bacon on parchment paper in a criss-cross pattern. Place a patty in the center, where the bacon strips overlap.
05 - Layer a pineapple slice on top of the patty and pull the bacon ends up and over so they wrap around everything. Secure with a toothpick right in the middle.
06 - Continue wrapping the rest of the patties, bacon, and pineapple slices in the same way. Put all the wrapped burgers on the baking tray you prepped earlier.
07 - Pop them in the oven for 15 minutes, then take them out. Brush the bacon with the remaining two tablespoons of BBQ sauce using a brush.
08 - Put the tray back in the oven and bake for another 10-15 minutes. When the inside hits 160°F, they're done. Cook less time if you'd like them a bit juicier.
09 - Take the burgers out and leave them to sit for five minutes. While they rest, toast your buns if you'd like.
10 - Pull out the toothpicks carefully and pop the burgers onto the buns. Pile on extra toppings like lettuce or cheese if you want and dig in.

# Notes:

01 - The USDA says ground beef should reach 160°F to be safe to eat.
02 - If you don’t have fresh pineapple, grab canned rings packed in juice. Just dry them off before using.
03 - Use regular or center-cut bacon. Thick slices won’t crisp up well in this timeframe.
04 - Let cooked burgers sit for 5 minutes to keep them juicy and flavorful.
