Set your oven to 375°F. Grab a baking sheet and cover it with parchment paper to keep things from sticking.

Spread out all four tortillas flat where you're working. Make sure they're not cold, so they roll without splitting.

Spoon about 2 tablespoons of pizza sauce onto each tortilla. Leave a little edge uncovered so you can roll them up easily.

Add 1/4 cup mozzarella to the sauced tortillas, then pop 4 slices of pepperoni on top of the cheese.

Sprinkle a pinch of Italian seasoning across each tortilla. Then, starting from one end, roll each one up nice and snug.

Put the rolled tortillas seam-side down on your parchment-covered baking sheet. Spray the tops lightly with olive oil if you're going for extra crunch.

Bake for 10 to 12 minutes until the edges are golden and the cheese melts and bubbles.

Once out of the oven, give them 2-3 minutes to cool down. Then slice into 3-4 pieces each. Serve with extra sauce for dipping on the side.
