Pepperoni Cheese Tortilla Roll-Ups (Printable Version)

Tasty low-carb roll-ups that combine mozzarella, pepperoni, and tortillas for a satisfying meal or snack made in minutes.

# Ingredients:

→ Base & Wrapping

01 - 4 tortillas made with low-carb flour
02 - 1/2 cup of pizza sauce, plus more for dipping on the side

→ Pizza Toppings

03 - 16 pepperoni slices
04 - 1 cup mozzarella, shredded
05 - 1/2 tsp of Italian spices

→ Finishing Touch

06 - Cooking spray made with olive oil (optional for crisp edges)

# Steps:

01 - Set your oven to 375°F. Grab a baking sheet and cover it with parchment paper to keep things from sticking.
02 - Spread out all four tortillas flat where you're working. Make sure they're not cold, so they roll without splitting.
03 - Spoon about 2 tablespoons of pizza sauce onto each tortilla. Leave a little edge uncovered so you can roll them up easily.
04 - Add 1/4 cup mozzarella to the sauced tortillas, then pop 4 slices of pepperoni on top of the cheese.
05 - Sprinkle a pinch of Italian seasoning across each tortilla. Then, starting from one end, roll each one up nice and snug.
06 - Put the rolled tortillas seam-side down on your parchment-covered baking sheet. Spray the tops lightly with olive oil if you're going for extra crunch.
07 - Bake for 10 to 12 minutes until the edges are golden and the cheese melts and bubbles.
08 - Once out of the oven, give them 2-3 minutes to cool down. Then slice into 3-4 pieces each. Serve with extra sauce for dipping on the side.
