Veggie Pasta Comfort (Printable Version)

# Ingredients:

01 - 4 cups water or vegetable stock
02 - 1 teaspoon garlic powder
03 - 1 cup of mixed vegetables (like spinach, broccoli, or peppers)
04 - Optional seasonings: Italian herbs or a pinch of paprika
05 - 2 cups grated cheese (cheddar or a dairy-free option)
06 - 2 cups pasta (macaroni works great, but pick your favorite)
07 - 1 tablespoon oil (olive works well)
08 - Salt and black pepper to your liking

# Steps:

01 - Pour the pasta and veggie broth into the pot. Once it reaches a rapid boil, lower the heat and put a lid on it. Cook for around 8-10 minutes, stirring here and there, until most of the liquid is gone and pasta's just right.
02 - Take the pot off the burner and stir in the cheese until it’s melted and gooey. If it's too thick, thin it out with a splash of milk or add more cheese if it's not cheesy enough.
03 - Sprinkle in some salt, pepper, and whatever extra spices you want. Give it all a good mix so the flavors come together.
04 - In a big pot, warm up your olive oil on medium heat. Toss your veggies in and give them a stir for a few minutes until they start softening up a bit.
05 - Scoop the cheesy pasta into bowls and enjoy while it’s still warm! Add toppings of your choice if you feel fancy.
