Recipe FAQs

→ Can I get it ready before bedtime?
Definitely! That’s the best part. Toss everything together in your slow cooker before hitting the sack, set it on low, and you’ll have a hot meal by morning. It’s ideal for 6-8 hours of cooking.
→ Can fresh potatoes replace frozen hash browns?
Of course! Swap in fresh ones if you like. Grate or chop them, then boil for 5 minutes to soften. Drain and dry them off first before adding.
→ What kinds of meat can I use?
Cooked ham, crispy bacon, or sausage will all work nicely. If the sausage is raw, make sure to cook it beforehand. Or skip the meat entirely and add more veggies if you want a vegetarian version.
→ Are other vegetables okay to use?
Totally! Go beyond onions and peppers with spinach, tomatoes, or mushrooms. Just chop your veggies small so they cook evenly with the other ingredients.
→ How can I tell if it’s done cooking?
When the eggs in the center are fully set, you’re good to go. Test by inserting a knife into the middle—if it comes out clean with no runny eggs, it’s ready to serve. You might also notice the edges turning golden brown.

Ingredients

→ Ingredients Needed

01 1 lb ham or bacon, precooked
02 12 large eggs
03 1 medium onion, diced
04 3/4 cup full-fat milk
05 1 1/2 cups shredded cheddar (medium)
06 32 oz frozen shredded hash browns
07 Salt and black pepper, as needed
08 1 green bell pepper, chopped up (optional)

Steps

Step 01

Coat the inside of your slow cooker (4-quart size) with spray or a light layer of oil to stop sticking.

Step 02

Evenly put 1/3 of the hash browns into the bottom of the slow cooker as the first layer.

Step 03

Top the hash browns with a third of the meat, diced onions, and optional bell peppers. Sprinkle with a pinch of salt and pepper for flavor.

Step 04

Throw on 1/3 of the cheddar cheese evenly over the meat-veggie mixture.

Step 05

Do the same layering (hash browns, meat, veggies, seasonings, and cheese) two more times until everything’s gone.

Step 06

Mix the eggs with milk in a large bowl until it’s smooth and combined nicely.

Step 07

Pour the egg mixture all over the layers in the slow cooker, spreading it out evenly.

Step 08

Cover the slow cooker, place it on low, and let it go for 6-8 hours. It’s ready when the eggs are firm and cooked fully.

Notes

  1. Switch up the meat by using sausage if ham or bacon isn’t your thing.
  2. Mushrooms or spinach make great extra veggies to toss in.
  3. Salsa, hot sauce, or sour cream are perfect toppings for serving.
