Slice each focaccia or ciabatta horizontally to make a top and bottom piece. Toast it lightly if you want it crunchier.

Generously smear pistachio pesto over the bottom piece of the bread.

Evenly lay down the slices of mortadella over the pesto on each sandwich.

Rip the burrata into chunks and scatter those pieces on top of the mortadella for each sandwich.

Sprinkle the chopped pistachios over the burrata layer, then cover with the top bread piece. Serve it whole or slice it into halves.
