Mint Choco Bars (Printable Version)

Soft, fudgy bars with a bright mint filling and silky chocolate topping. A perfect dessert for sharing any time.

# Ingredients:

→ Base

01 - 1 box of brownie mix (plus whatever's called for on the package)

→ Mint Buttercream

02 - 1-2 tablespoons heavy cream
03 - 2 cups powdered sugar
04 - 3/4 cup softened salted butter
05 - 1-2 drops green food dye
06 - 1 teaspoon mint flavoring

→ Ganache

07 - 1 cup whipping cream
08 - 2 cups chocolate chips (semi-sweet)

# Steps:

01 - Get your oven ready by heating it as mentioned on the brownie box. Cover the bottom and sides of an 8x8 pan with parchment paper, then prep and bake the brownies like the box says. Let them cool off totally before continuing.
02 - In a mixing bowl, whip butter until smooth and creamy. Gradually add powdered sugar while beating. Toss in the mint extract, a dash of green coloring, and the heavy cream. Blend until it’s light and smooth.
03 - Once the brownies are cool, spread the buttercream evenly over the top. Pop them in the fridge till the frosting firms up.
04 - Warm the cream until it’s hot but not boiling. Pour it over the chocolate chips and let it sit for a few minutes. Mix until the chocolate is fully melted and smooth.
05 - Smooth out the ganache over the chilled buttercream layer. Give it about 45 minutes to firm up at room temp or chill it in the fridge for 15 minutes. Slice into squares and enjoy!

# Notes:

01 - Keep at room temperature for up to 4 days or stash in the fridge for a week.
02 - They freeze well for up to 3 months.
03 - Mint extract tastes better than using peppermint.
04 - Try using a 9x13 pan if you want thinner layers.
05 - Since they’re super rich, cut into small 1-inch squares if you’d like.
