Heat up a large pan over medium heat. Toss in the ground beef, breaking it apart as it browns. Cook, stirring often, for 5-8 minutes until no pink is left. Drain out the grease, then pour in taco seasoning, water, and enchilada sauce. Stir it all together and let it gently bubble for 1-2 minutes.

Lay one tortilla down and spread a generous amount of refried beans over it. Add the seasoned beef mixture and sprinkle shredded cheese on top. Put another tortilla over this layer, spread a spoonful of enchilada sauce on top, and cover it with cheese.

Set your air fryer to 400°F. One at a time, place a pizza in the basket and let it cook for around 5 minutes, or until you're happy with the melted cheese and crispy tortilla texture. Do this with the rest.

Turn your oven on to 350°F and prepare a baking sheet with parchment paper or foil. Space out the pizzas on the tray and bake for 8-10 minutes, keeping an eye on them while the cheese melts and the tortillas crisp up.

Lightly oil a big skillet and heat it over medium. Place a pizza in, cover with a lid, and let it cook for 4-5 minutes. The cheese should melt perfectly as the bottom tortilla crisps.

Move the pizzas onto plates. Go wild with the garnishes – maybe diced tomatoes, chopped onion, some sour cream, black olives, or a sprinkle of green onions. Serve right away and enjoy!
