# Ingredients:

→ For the Salad

01 - 1 small cucumber, chopped
02 - 1.5 cups of cooked brown or green lentils
03 - 0.5 cup pitted Kalamata olives
04 - 1 cup halved cherry tomatoes
05 - 0.25 cup chopped fresh parsley
06 - 0.5 of a red onion, sliced thin
07 - 0.5 cup of feta, crumbled

→ For the Dressing

08 - 1 garlic clove, finely minced
09 - 0.25 cup of olive oil
10 - 0.25 teaspoon freshly ground black pepper
11 - 1 teaspoon oregano (dried)
12 - 2 tablespoons fresh lemon juice
13 - 0.5 teaspoon of salt

# Steps:

01 - In a big bowl, add the lentils, tomatoes, cucumber, onion, olives, and parsley—give it a light stir to combine.
02 - Stir together olive oil, lemon juice, garlic, oregano, salt, and pepper until smooth and combined.
03 - Drizzle the dressing over your salad mixture. Toss everything together lightly so it's evenly coated.
