A simple, vibrant dish featuring seared chicken breasts, juicy tomatoes, fresh spinach, and lemon-zested orzo pasta, all cooked in one pan and done in half an hour.

# Ingredients:

01 - 1 cup orzo pasta
02 - Juice from one lemon
03 - 2 handfuls of baby spinach
04 - 2 tbsp of extra virgin olive oil
05 - 3-4 chicken breasts without skin or bones
06 - Salt and pepper as needed
07 - 4 minced fresh garlic cloves
08 - 1 tsp oregano (dried)
09 - 1 cup of cherry tomatoes, sliced in half

# Steps:

01 - Halve your cherry tomatoes, chop the garlic, and boil the orzo following the box instructions.
02 - Season the chicken pieces and sear them in a hot pan with olive oil over medium heat. Give each side 6-7 minutes to brown up nicely.
03 - Toss in the garlic and tomato halves. Stir around until you notice the garlic smelling really good.
04 - Pour the cooked orzo into the pan along with the fresh spinach. Mix until the spinach softens up.
05 - Drizzle the lemon juice over everything and sprinkle with oregano. Stir gently, plate it up, and serve hot with your favorite garnish.

01 - For a bit of extra flavor, toss in feta pieces or some kalamata olives before serving.
02 - Swap orzo for cooked quinoa or rice to make this free of gluten.
03 - Keep leftovers in a sealed container in the fridge, and they’ll last up to 3 days.
