Mix up the mashed potatoes, egg, some salt, and pepper in a bowl until blended smoothly.

Take a scoop of the mixture, cover a chunk of cheddar in it, and shape it into a ball.

Coat each potato ball with bread crumbs, making sure it's fully covered.

Take a strip of bacon, wrap it around each ball, and hold it in place with a toothpick.

Heat your oil to about 350°F. Fry 1 or 2 bombs at a time until the bacon is crispy and they're golden.

Set fried bombs on some paper towels to drain. Remove the toothpicks and enjoy with sour cream while warm.
