Cucumber Tomato Onion Mix (Printable Version)

# Ingredients:

→ Vegetables

01 - 1 large red onion, finely sliced
02 - 3 medium tomatoes, diced or cut into slices
03 - 2 big cucumbers, sliced thin

→ Marinade

04 - 1 teaspoon dried herbs like oregano, or fresh ones like parsley, dill, or basil
05 - 1/2 teaspoon ground black pepper
06 - 1 teaspoon salt
07 - 1 tablespoon sugar (taste and adjust as needed)
08 - 2 tablespoons of olive oil
09 - 1/4 cup apple cider vinegar or white vinegar

→ Optional Additions

10 - Optional feta cheese
11 - Optional crushed red pepper flakes
12 - Optional garlic

# Steps:

01 - Quarter your tomatoes or chop them small. Cut onion into thin rings. Slice cucumbers into rounds, then toss them all together in a big bowl.
02 - Combine the vinegar, olive oil, sugar, salt, herbs, and pepper in a small jar or bowl. Stir or shake well until the ingredients blend completely.
03 - Drizzle the marinade mix over everything in the bowl. Toss the veggies until they're well coated and every piece gets some of the marinade.
04 - Cover the bowl and refrigerate it for at least an hour, though leaving it overnight will taste even better.
05 - Give the salad a quick stir before serving. Scoop it out with a slotted spoon, and top with herbs or feta if you’d like.
