Bright Lemon Tiramisu (Printable Version)

Layers of lemonade-soaked ladyfingers, mascarpone cream, and lemon curd blend together for a light, sunny dessert perfect for hot days.

# Ingredients:

→ Base

01 - 1 1/2 cups lemon curd (store-bought or homemade)
02 - 12 ounces ladyfingers (two packs, 7 oz each)
03 - 3/4 cup lemonade (recommend Simply Lemonade)

→ Cream Layer

04 - 8 ounces mascarpone cheese
05 - 2/3 cup powdered sugar
06 - 1 tablespoon finely grated lemon zest
07 - 1/4 cup instant lemon pudding powder
08 - 1 1/2 cups heavy cream

→ Optional Garnish

09 - Mint leaves
10 - Thin lemon slices
11 - Fresh strawberries

# Steps:

01 - Coat a 9-inch baking dish lightly with nonstick spray. Pour lemonade into a wide bowl.
02 - Layer dipped ladyfingers in the bottom of the dish and top with half the lemon curd.
03 - Whip cream with lemon zest until it thickens. Gradually mix in powdered sugar and pudding mix. Blend in mascarpone cheese until smooth and creamy.
04 - Spread half the whipped cream mixture over the first layer. Add another layer of soaked ladyfingers, the rest of the lemon curd, then top with the remaining cream mixture.
05 - Cover tightly and refrigerate for at least 6 hours or leave overnight for best texture.

01 - Stays fresh in the fridge for up to 3 days.
02 - Tastes best within two days of making.
03 - Freezing isn’t recommended for this dessert.
